When I decided to leave Vietnam earlier than planned, I was thrilled to discover I would be back in time for the launch of Niomi Smart’s healthy cookbook, ‘Eat Smart’. For those of you who don’t know (and if you don’t, get to know), Niomi is a vlogger who specialises in healthy eating and ‘what I eat in a day’ videos.
The launch was better than I could’ve imagined, starting with a very full bag of Wholefoods goodies (where it was held), followed by a Q&A with Niomi herself and finished with a book signing (and some falafel from the book while we waited!) I thought all of this for £30 (including the book) was pretty good value!
So, the book itself..
Yesterday I made my first recipe, a banana, date and walnut loaf that I later topped with almond butter and served with a scoop of salted carmel ice cream – soo delicious! From my browsing it looks like she draws inspiration for her recipes from her travels and I was really impressed by her ideas and look forward to making more soon!
